Colcannon is a very traditional Irish dish which consists of mashed potatoes and cabbage. Traditionally colcannon was served at Halloween; The host would mix a coin, a button, and a ring into the colcannon and whoever found them had the following fortunes: coin meant wealth, button meant spinster or bachelor, and a ring meant marriage in the near future– kind of fun! I like to serve this with Dublin Lawyer on top on St. Patrick’s Day, just to change it up from the typical corned beef and cabbage. I also make this in lieu of mashed potatoes, just because it is so much more interesting. Enjoy!

I’ve hosted lots of big parties over the years with this recipe. It’s a basic recipe with a great alcohol ratio. Keeps everybody going without falling out too early. Makes 10 servings… because with Jello Shots it’s always a 2 shot minimum!

Reuben lovers will definitely like this casserole. The first time I made this, I used deli-sliced corned beef, but I’ve found it works great with shredded leftovers from a brisket, too. I also prefer brown deli mustard over other varieties. Pair this casserole with a salad of mixed greens, and you’ve got one tasty meal!

These are my most “dangerous” cupcakes that I have recently been experimenting with because they pose a triple threat:
-Bailey’s in the moist cake
-Bailey’s in the creamy frosting
-and finally, they’re sooo good and moist that you won’t be able to eat just one, and you just might eat the entire batch in one sitting! (assuming, of course, that there is even any batter left over to bake!)The dark-chocolate cake has a hint of Bailey’s in the batter, but the frosting I made a tad bit too strong. If you are a light-weight like myself, I would suggest cutting down the Bailey’s in the frosting down to 2 teaspoons-1 tablespoon and adding a bit more coffee. Or you can eliminate the Bailey’s in the frosting all-together and add a Tablespoon of coffee and make a yummy coffee frosting for these “bad boys”.

I got this off a turkey website. It went with a Bourbon glazed turkey and apple hash. This was a very tasty mustard. I halved this recipe when I made it and it was plenty. I posted the apple hash recipe also.

I love cabbage! And bacon, and onion, so you will see several recipes sort of alike here. It’s such a comfort food for me.Sometimes I’ll leave out the bacon and add ground beef. Sometimes I’ll add some fresh chopped tomato. Cabbage is like a canvass, you can add things and make it an ever-changing recipe. The times are just a guestimate.
