King Oyster Mushroom Scampi and Pasta
Ingredients (use vegan versions):
2 large King Oyster (Eryngii) mushrooms
1 tablespoon olive oil
4 tablespoons vegan margarine, divided
8 to 10 cloves garlic, minced
2 teaspoons shallot or onion powder
1/3 cup dry white wine
2 servings pasta, prepared (spaghetti, angel hair or linguine)
1/4 cup Italian flat leaf parsley, coarsely chopped
1 medium lemon, juiced (3 to 4 tablespoons)
sea salt, to taste

Italian Vegetable Soup with Stelline!
Ingredients (use vegan versions):
water
1/2 cup stelline (tiny star shaped pasta – orzo will work, but it isn't as cute)
olive oil
1 yellow onion, chopped
5 cloves garlic, minced
2 cups chopped mushrooms
1 tablespoon basil
1 tablespoon oregano
1 tablespoon parsley
1/2 teaspoon salt, or to taste

Ingredients (use vegan versions):
1 medium onion, chopped
1 small carrot, diced
1 small stalk celery, diced
2-3 cloves garlic, diced
olive oil
salt and pepper, to taste
2 vegetable bouillon cubes + 4 cups water
oregano, to taste
basil, to taste
2 splashes hot sauce, optional
1 (14 ounce) can whole tomatoes, quarter the tomatoes, with juice
1/2 cup salad macaroni
1 (14 ounce) can cannellini beans, drained and rinsed
