Delightful Summer Enchiladas
Ingredients (use vegan versions):
water or oil, to saute
1 large yellow onion, chopped
1 to 2 cloves garlic, minced
12 ounces summer squash, chopped (I use 1 zucchini, 1 yellow, and 1 white pattypan)
1 (10-ounce) can chopped tomatoes & jalapenos (I use the Mexican cilantro-lime seasoned variety)
1 cup black beans, rinsed and drained
1 (1.5 ounce) packet enchilada seasoning
1 large lime, juice of
8 corn tortillas
1 (10-ounce) can red enchilada sauce

Mexican Dip
Ingredients (use vegan versions):
8 ounces vegan cream cheese
1 (15 ounce) can vegetarian refried beans
salsa, to taste
vegan cheddar cheese, shredded, to tasteDirections:
1. Preheat oven to 350 degrees F.
2. In a baking dish, spread the ingredients in the following order: cream cheese, refried beans, salsa, and cheddar cheese.
3. Bake until the cheese is melted on top. Serve with your favorite tortilla chips or pita chips at a party or during a football game.

Mexican Pinwheels
Ingredients (use vegan versions):
1 (14.5-ounce) can diced black olives
1 (8-ounce) container vegan cream cheese, room temperature
1 (4-ounce) jar diced pimento, drained
1 (4-ounce) can diced green chilies or diced whole chilies, drained
4 to 6 (12") flour tortillasDirections:
1. In a bowl, mix the black olives, vegan cream cheese, pimentos, and green chilies.
2. Spread mixture on surface of tortilla, just enough to coat it. Leave some space along the edge. Roll tortilla into tube shape.
3. Wrap each rolled tortilla in plastic wrap, and refrigerate for 1 to 2 hours.

Mexican Chilaquiles
Ingredients (use vegan versions):
vegetable oil, for frying
2 dozen corn tortillas, torn into fourths
1 (14.5-ounce) can diced tomatoes
1 or 2 jalapeno peppers
1/4 cup chopped onions
1/2 tablespoon mined garlic
salt, to taste
4 green onions (optional), sliced

A Sally Wise recipe from “My Kitchen to Yours”. Recipe makes 8 tortillas. You can use a dairy-free margarine if wished. Use a blended gluten-free plain flour for this recipe. Use for mexican style dishes. A good gluten-free option using pantry/fridge staples.

Easy Mexican Millet
Ingredients (use vegan versions):
1 cup millet
2 cups water
2 teaspoons olive oil
1 clove garlic, minced
2 fresh ears corn, kernals removed (or the equivalent in frozen or canned)
4 large tomatoes, diced
1 tablespoon cumin
1-1/2 cup cilantro, chopped
salt and pepper, to tasteDirections:
1. Bring millet and water to a boil. Cover and turn down heat until all water is absorbed. ( about 15-20 minutes )
2. In a large skillet, heat oil over medium-high heat and add garlic and corn. Sauté for two minutes and then add tomatoes. Season lightly with salt, and pepper.
